I’ve been doing some baking with my daughter this evening, we’ve made three types of mince pie, and a Christmas cake for my parents and us. I know you’re meant to make a rich fruit cake months in advance, I never seem to get around to baking the Christmas cake in October. I did make my own wedding cake in plenty of time, well you have to when someone else is decorating it.
The mince pies we baked were the recipes I mentioned a few days ago, though we made a variation of the Viennese variety, I couldn’t find a piping bag or icing syringe so my assistant rolled the dough and cut star shapes for the top of the pie. They are lovely and definitely easier to do. the meringue topped pies are slightly crisp on the outside but soft in the middle – yum!
