6oz Soft Margarine
6oz Soft Light Brown Sugar
7oz Plain Flour
1 Teaspoonful Baking Powder
1 Teaspoonful Salt
6oz Porridge Oats
4 Tablespoonfuls of Jam
Grease a square ( any shape is fine) microwaveable container.
Cream sugar and margarine together in a large mixing bowl until lighter coloured.
Stir sieved flour, baking powder and salt into the creamed sugar and margarine, then stir in the oats, the mixture should look crumbly, not too well mixed.
Spoon half the mixture , press it into the base of the container .
Spread the jam over the mixture.
Sprinkle the remaining mixture over the top and press down gently.
Cook on Full Power in the Microwave for 61/2 -71/2 minutes.
Remove from microwave and cut into squares.
Leave to cool.
Judge the Jam Crumbles by taste rather than appearance, they’re quite pale compared to oven baked flapjacks. You could use softened dried apricots or dates. They freeze well, and are great in lunch boxes.
