1lb Leeks
1lb Potatoes
2 Vegetable Stock Cubes
1000mL Water
150ml Skimmed Milk
Ground Black Pepper
Peel and wash the potatoes, then cut into chunks.
Wash the leeks, then chop them.
Make up the stock according to the instructions on the packet.
Put the potatoes , leeks and stock into a large saucepan , bring to the boil , then reduce the heat and simmer until the vegetables are soft.
Remove from the heat. Puree the soup(it may be easier to do this in two batches).
Add the milk, stir and return to the heat.
Heat gently to warm through. Add pepper to taste.
Serve in warmed bowls.
The soup can be frozen.
