We had a guest for meals on Sunday who was Vegetarian. I cook meatless dishes for my family but was a bit unsure what to cook for a guest . I wanted something that could be served with the accompaniments the other guests ( my father and mother – in -law) and my family were eating. I made this loaf , it was very tasty, our guest enjoyed it. The recipe would be great for a packed lunch as it slices very well, or with a salad.
Oven Temperature 160 ºC (Fan Oven), 180ºC, Gas 4, 350ºF
225 g Red Lentils
1 Chopped Onion
2 Cloves Garlic
100g Fresh Brown Breadcrumbs
100g Grated Cheddar Cheese
1 Tablespoon Chopped Parsley
1/2 Teaspoon Dried Mixed Herbs
1 Egg
Salt and Pepper
1. Grease and Line a 1 Kg loaf tin with greaseproof paper.
2. Cook the Lentils according to the instructions on the packet and add the onion and garlic to them, the lentil mixture should be “mushy”. Stir frequently towards the end of the cooking time to prevent the mixture sticking to the saucepan.
3. Mix the lentil, onion and garlic mixture with the remaining ingredients, season to taste.
4. Pack the mixture in the prepared tin, cover with greaseproof paper and bake in the oven for 1 hour.
5.Garnish with hazelnuts or sliced tomatoes .
6.Serve hot or cold
