I try to follow the Weight Watchers Food Plan. Instead of calories foods are given a Points value. This recipe includes any combination of “Zero Point ” vegetables. It’s eay to make and you can freeze it.
I made the soup today with the following :
4 Carrots
2 Red Onions
2 Turnips
1 Small Swede
1/2 a Celeriac
1 Tin of Chopped Tomatoes
1 Vegetable Stock Cube
Water to cover the vegetables
Black Pepper
Add herbs or spices such as Cumin, Chilli, Mixed herbs
Peel and wash chop the vegetables .
Place in a large saucepan.
Cover the vegetables with water, add the stock cube.
Bring to the boil , reduce the heat then simmer until the vegetables have softened.
You can either eat the soup with chunky vegetables or puree it in a Food Processor or with a blender.
