The blog does begin with the word “whatever,” so I guess I’ll write about a mixture of things.
I enjoy cooking, baking, breadmaking-with a bread-maker and making sweets. I have a recipe for fudge whichI’ve adapted to a lower fat version.
Here it is .
1 Can /375g Condensed Milk ( Use Light / Lower fat variety)
100g Flora Light ( A low fat sunflower spread)
450g Caster Sugar
Put all the ingredients into a saucepan, stir with a wooden spoon, bring to the boil when the Sunflower spread has melted .
Boil for about 10 minutes, stirring all the time until it reaches the soft ball stage.
Check that the fudge is ready by dropping a 1/2 teaspoonful of the fudge into a bowl of cold water, it should be firm but malleable.
Remove from the heat and place saucepan in 2-3 cm of cold water.
Add 1 teaspoon of vanilla extract, stir until the fudge cools a bit.
Scrape miture into a 20×20 cm square cake tin.
Leave to cool, then cut into squares.
I made some for my family last evening as a treat , it’s delicious but very sweet!
